A fresh specialty coffee destination has arrived in the Dallas area, bringing meticulous attention to every detail of the coffee experience. Kilo Coffee, which debuted in September at Snider Plaza in University Park, is redefining what a high-end cafe can offer by combining precision brewing with a thoughtfully designed environment.
What Makes Kilo Coffee Different
Unlike typical coffee shops that prioritize speed, Kilo Coffee emphasizes measurement and quality at every step. The centerpiece of the operation is a 45-foot U-shaped bar crafted with dark quartzite, where customers can observe baristas working with specialized equipment designed for consistency. Each espresso shot uses a precise 15-gram dose pulled on a Meticulous Espresso machine, ensuring that every cup meets exacting standards.
The cafe maintains a dedicated slow bar featuring an 11-foot counter with just four seats. This intimate space showcases manual brew methods, including Orea Z1 brewers that allow customers to experience coffee preparation firsthand. The owners source their beans from Onyx Coffee Lab in Arkansas, storing them in a chest freezer to preserve freshness and rotating through eight to 10 single-origin varieties at any given time.
A Thoughtful Approach to Coffee Selection

Kilo divides its slow bar offerings into three distinct profiles to guide customers through the specialty coffee world. The Expressive category highlights coffees with unique post-harvest processing and interesting flavor notes, while Refined selections feature rare or exceptionally high-scoring beans for experienced enthusiasts. The Balanced category offers more approachable single-origin coffees and blends with familiar character, making it ideal for those new to specialty coffee experiences.
Co-owner Alex Vu explained the strategy: the goal is to make specialty coffee accessible to everyone, including those encountering a pourover for the first time. By offering something for each palate, the cafe encourages customers to explore different brewing methods and flavor profiles. This educational approach means shoppers aren’t just buying coffee; they’re gaining knowledge about what makes certain beans exceptional.
Signature Drinks and Menu Innovation
Beyond the slow bar, Kilo creates signature beverages that showcase creative flavor combinations. Offerings include the Orange .013, which pairs Mont Blanc coffee with orange, nutmeg and dark chocolate, and the Bergamot .008, featuring Earl Grey espresso tonic with lemon. These drinks demonstrate how thoughtful flavor pairings and syrups can elevate specialty coffee into something memorable.
The onsite kitchen, led by Victoria Vu who studied nutrition at Texas A&M University, rounds out the menu with fresh pastries, sandwiches, burritos and desserts. The team plans to introduce seasonal drinks and eventually develop a coffee omakase program, giving customers unique tasting experiences that evolve throughout the year.
Design That Supports the Coffee Experience

The physical space itself plays a crucial role in Kilo’s mission. Neutral tones of stone, concrete and wood combine with sandy-white walls and natural overhead skylights to create a calm atmosphere. Wooden tables and chairs sit alongside cushioned lounge furniture, providing comfortable seating for customers to linger and enjoy their coffee. Several design elements were personally selected by the owners during their travels, giving the space an intentional, curated feel.
What This Means for Coffee Shoppers
The opening of Kilo Coffee represents a broader shift in the specialty coffee industry toward transparency and precision. For shoppers in the Dallas area, this means access to high-quality beans sourced with care and prepared with meticulous technique. Rather than accepting mediocre coffee as standard, consumers increasingly expect their cafe to explain its methods, justify its prices and deliver consistency.
Kilo’s approach also signals that shoppers are willing to pay for educational experiences alongside their coffee. The slow bar concept allows customers to understand how different brewing methods extract different flavors from the same bean. This knowledge translates into better choices when purchasing specialty coffee beans for home brewing, helping shoppers make informed decisions based on personal taste preferences.
While Kilo is currently operating at its single University Park location, the owners remain open to expansion. For now, they’re focused on continuously evolving the menu, rotating coffee selections and experimenting with new brewing equipment and methods. This commitment to innovation means regular customers will discover something fresh on each visit, keeping the experience dynamic and engaging.
